About

Welcome to Scrumdillyicious!

If you like creative recipes and wholesome foods this is the place for you. While learning to use ingredients that not only benefit my taste buds but also my body, I hope to motivate others to fuel-up and align themselves with the tools and education needed to make healthy lifestyles a reality.

Using fresh foods and mostly organic products are a very big part of my every day cooking as I strive to enhance my health and wellness. I also think that moderation is the key to finding that healthy balance with what I eat on a daily basis while also indulging in sweet treats every once in awhile.

About me!

Well if you cannot tell already I have a career in nutrition as a Registered Dietitian, and of course food plays a big part both while working and cooking at home. Of course taste is very important to me but I also look at the science behind what a specific food is doing inside my body.

While I am currently located in Madison, WI I am originally from a small town outside of Lansing, MI. Working at two hospitals takes up most of my time, but I always find time for my hobbies which include running, hiking, cooking, baking, horseback riding, and traveling.

Newly married since August 28, 2010 to my wonderful husband Roy, who is an Electrical Engineer and works for a consulting company here in Madison. Roy is good at many things but cooking is not one of them, but he is well known for his infamous recipe called “The Pot of Goo.” He is a connivance eater which drives me crazy, let’s just say his diet has greatly improved since dating/marrying me.

This blog was started in order to stay connected with my family and friends while sharing my adventures with cooking and living a healthy lifestyle. Please enjoy!!

    Erica,
Dad LOVED the chocolate cake!!! It was moist, chocolaty, and “scrumpdillyicous”. What a wonderful treat on Valentine’s Day weekend for the whole family.
    Love, Mom
